Blackberry Buckle - Half Batch


 

 

Ingredients

§  ½  stick Butter

§  ½  cup Sugar plus 2 Tbsp. for dusting

§  5/8 cup Self-Rising Flour

§  ½  cup Milk

§  1 tsp. baking powder

§  ½  tsp. vanilla

§  ¼  tsp. salt

§  1 ½  cups Blackberries (frozen Or Fresh) with 1 tsp vanilla, 1 tsp lemon juice, and 1 Tbsp. sugar mixed in gently

Directions

Preheat the oven to 350 degrees.

Melt butter in a #5 skillet. Pour sugar, salt, baking powder and flour into a mixing bowl, whisking in milk and vanilla. Mix well. Add the vanilla, lemon, and sugar to the berries and set aside.  Pour the batter over the butter. The melted butter will spill up around the edges - don't stir it in. Sprinkle blackberries over the top of the batter; distributing evenly. Sprinkle an additional 2 tablespoons of sugar over the buckle

Bake in the oven at 350 degrees for 40 minutes, or until golden and bubbly. If you desire, sprinkle another 2 tablespoons of sugar over the buckle 10 minutes before it’s done.
