Ingredients
3 Tbs. butter
3 eggs
3/4 c. flour
3/4 c. milk
1/4 tsp. salt 2 apples
1/8 c. brown sugar
1/2 tsp. cinnamon
Directions
Place the butter in the 10 inch cast
iron skillet and put in the oven as it preheats. Preheat the oven to 400
degrees.
Thinly slice two apples and set them
aside.
Blend 3 eggs, 3/4 c. flour, 3/4 c.
milk, and 1/4 tsp. salt.
Remove the skillet carefully from
the oven. Butter up the side all the way around to prevent sticking.
Sprinkle brown sugar and cinnamon
over the butter.
Layer the apples on top of that.
Pour the batter over the apples.
Bake 35-40 minutes.
Invert onto a heat-safe plate or
remove with a spatula while it's still hot. Slice and serve.
You can omit the apples and serve
with jam, fruit syrup, or fresh fruit topping and whipped cream.
