Mexican Frittata




Serves 4
Ingredients
1 T. oil
1/2 red onion, cut into thin slices
1 red or orange pepper, cut into thin slices
1 small zucchini sliced thin
5-6 eggs
Fajita seasoning
salt and pepper
1 cup shredded white sharp cheddar
1 avocado (optional, but recommended)
Tortillas

Instructions
     Use and oven safe skillet. I use a cast iron skillet.
    Turn on broiler, shelf down about 6 to 8 inches
Heat oil in a skillet on medium heat.
Once hot, add onions and cook for 5 minutes.
Add peppers and zucchini, season with fajita seasoning, and cook for an additional 5-8 minutes.
Remove from heat and let cool slightly.
Whisk eggs thoroughly with salt and pepper.
Place pan back on stove and turn on low heat.
Add eggs, sprinkle with cheese, and cook for 4-5 minutes until eggs are set along the edges.
Broil eggs for 2-3 minutes until top is browned and eggs puff up.
Top with your favorite  pico de gallo, sour cream, and avocado. Side with warm tortillas.
