Kalua Pork


Ingredients
1 (6 pound) boneless pork butt roast or pork cushion
1 1/2 tablespoons Hawaiian salt
1 tablespoon liquid smoke flavoring (hickory preferred)

Directions
1. Pierce pork all over with a carving fork. Rub liquid smoke then salt over meat. Place roast in a slow cooker.
2. Cover, and cook on Low for 8 to 10 hours, turning once during cooking time.
3. Remove meat from slow cooker, and shred, adding drippings back to the pork.

Nope… no Kahlua in this. Kahlua is an alcoholic beverage. Kālua is a traditional Hawaiian cooking method that utilizes an imu, a type of underground oven. The word kālua, which literally means "to cook in an underground oven", may also be used to describe the food cooked in this manner, such as kālua pig or kālua turkey, which are commonly served at luau feasts. In this recipe, the imu is replaced with a slow cooker. C’mon, what would I do with a whole pig?
Excellent served in tacos, on the side of stir fry veggies, with sticky rice and mac salad, on top of a burger, as a pulled pork sandwich, etc.
