Creamy Mushroom Soup



Ingredients

1 Pint of heavy cream

1 Cup of milk

½ Teaspoon of paprika

¼ Cup of diced onion

3 Tablespoons of minced garlic

½ pound of Cremini mushrooms, sliced, divided

 1 Teaspoon of salt

½ Teaspoon cracked pepper

Directions

Mix cream, milk, salt, pepper, and paprika in a 10 inch skillet and bring to a low simmer.

Sautee the onion and garlic until clear and fragrant. Add to the cream mix.

Sautee half of the mushrooms and add to the cream mix.

Puree the cream mix either with and immersion blender or in a blender until smooth with no mushroom pieces larger than cracked pepper pieces.

Sautee the remaining mushroom slices until the release moisture and are fragrant. Add to the cream mix. Simmer gently for 15 minutes.

Serve while hot or use in hotdish instead of store bought.
