Beef Burger Stroganoff
Ingredients
1/2 cup minced
onions
2 cups cashew
cream
1 cup cashew sour
cream
1 garlic
cloves, minced
1/4 cup butter
1 lb ground
beef
2 Tbs corn
starch mixed with 2 Tbs water
1 tsp salt
½ tsp cracked
pepper
½ pound of Cremini mushrooms, sliced, sautéed
1 (12 ounce)
bags egg noodles, cooked
Directions
1.
Put cashew cream in a saucepan or skillet and bring to a simmer but don’t
boil
2.
Sauté mushrooms over medium heat and add to cashew cream
3.
Sauté onion and
garlic in butter over medium heat and
add to cashew cream
4.
Add salt and pepper
5.
Brown burger in
the skillet that the garlic, onions, and mushrooms were sautéed in, then add to cashew cream
6. De-glaze the skillet with ¼ cup of water or beef stock and add to the cashew
cream
7.
Bring back to a simmer for 10 minutes
8.
Stir in cashew sour
cream until heated. Serve over noodles
