Ham Cheddar Potatoes Au Gratin




Ingredients
4 medium potatoes sliced thin and separated into thirds
1 medium onion, diced and separated into 1/3s
2 cups chopped ham separated into 1/3s
2 cups heavy cream
2 Tbs corn starch mixed with 2Tbs water
8 oz Monterey Jack
8 oz Cheddar cheese
1 Tbs butter
1 cup water
2 tsp salt
1 tsp cracked pepper
7″ spring form pan
Directions:
In a small saucepan, melt butter, add chopped onion and sauté until onion is tender. Pour in heavy cream, bring to a simmer, add corn starch – water mix, simmer until thick and bubbly. Add cheeses and stir until melted  set aside. Layer your Spring form pan with sliced potatoes, Top with 1/3 of your chopped ham. Pour 1/3 of cheddar sauce over the top. Repeat layer 3 times. Pour 1 cup water in the bottom of the Instant Pot with a trivet. Place your pan on the trivet. Cook on manual high pressure for 40 minutes. Do a quick release. To brown the top place in your broiler for 2-3 minutes and serve.
