Chicken Pot Pie (or Stew)






Ingredients
2 cups heavy cream
2 cups smoked chicken
1 tsp salt
½ tsp pepper
½ tsp paprika
1 Tbs fresh parsley chopped fine
½ tsp thyme
4 cloves garlic minced

2 Tbs corn starch
2 Tbs water

2 cups chicken stock
½  medium onion chopped
1 cup diced carrot
1 cup diced celery
1 cup peas
Add these for stew
½ cup green beans
½ cup corn
½ pound Cremini mushrooms, sliced
1 cup diced cooked potato

Directions
Add the first 8 ingredients to a sauce pan or 10’ skillet
If mushrooms are desired, sauté and add to cream pan
Bring to a simmer, but don’t boil
Add the chicken stock, carrots, celery, and peas, (along with beans and corn)  to a second pan and boil until al dente
Add vegetable stock mix to cream pan and bring back to a simmer
When at a simmer stir in the corn starch/water mixture
Serve over fresh biscuits
