I make these for four as a side dish. You can double,
triple, whatever you need. I like to use leftover mashed potatoes, but I make
this from scratch too.
Ingredients
3 pints of mashed potatoes
1 bunch of green onions, diced
3 tbsp of minced garlic
4 oz of cream cheese
1/8 cup of butter
¼ tsp of salt
¼ tsp of pepper
Directions
Heat the leftover potatoes or use fresh mashed potatoes
warm enough to melt the butter easily.
Add the butter, salt, pepper, garlic, and green onions.
Continue to warm the potatoes slowly and stir
occasionally while you prepare whatever delectable main course this will
accompany.
When the potatoes are warm enough to serve, add the cream
cheese and stir in well.
Serve warm.
