Roasted Parmesan Potatoes
Ingredients
·         4 cups ¾ inch cubed potatoes
·         3 tbsp olive oil
·         1/2 tsp garlic salt
·         1/2 tsp salt
·         2 tsp paprika
·         1 tsp pepper
·         4 tablespoons freshly grated Parmesan cheese
·         ½ tsp sriracha sauce blended into the olive oil (optional, more if you really like heat)
Instructions
     Preheat your oven to 425 degrees. Place the cubed potatoes into a baking dish, single layered if possible. I like a 9”x13” glass cake pan with a light coat of olive oil to make sticking less likely and clean-up easier.
     Mix the olive oil, garlic salt, salt, paprika, pepper and Parmesan cheese into the potatoes making sure to coat each potato.
     Slide the baking dish into the oven and toss the potatoes every 15 minutes.  Bake 45 minutes to and hour, depending on your oven and what you have the potatoes in.  You are looking for golden and crispy. Season with a little sea salt and extra Parmesan cheese and serve.
     I find the leftovers, if there are any, work great as the base for a breakfast  scramble.
